UniProtKB description:  Catalyzes the synthesis of levan, a fructose polymer, by transferring the fructosyl moiety from sucrose to a growing acceptor molecule (PubMed:7619044). Also displays sucrose hydrolase activity (PubMed:8704949, PubMed:7619044). In vitro, catalyzes transfructosylation from sucrose to a variety of acceptors including water (sucrose hydrolysis), glucose (exchange reaction), fructan (polymerase reaction) and sucrose (oligofructoside synthesis) (PubMed:7619044). Levansucrase of G.diazotrophicus SRT4, unlike the enzyme of B.subtilis, causes accumulation of large quantities of tri- and tetrasaccharides but small quantities of high-molecular-mass levan (PubMed:7619044). It may act more as a sucrose hydrolase than as a fructan polymerase, and may be the key enzyme in the sucrose metabolism of G.diazotrophicus SRT4 (PubMed:8704949).
